Lemon Cobbler

1/2 stick salted butter

1 c flour

1 1/2 tsp baking powder

1 c sugar

1 c buttermilk

1tsp vanilla


  • PH oven to 350°.

  • Place butter in 7x11” baking dish; put in oven. Allow to melt completely, about 3-4 minutes; remove from oven.

  • In mixing bowl, whisk together the flour, baking powder, and sugar. Once combined, add buttermilk, vanilla, and lemon extract. Continue whisking until a smooth batter forms.

  • Pour batter evenly over melted butter in casserole dish. Do not stir!

  • Spoon lemon curd evenly over batter.

  • Bake for 60-75 minutes, or until top is golden brown. Edges will be puffy, and curd will be bubbly and thick like pudding.

  • Remove from oven; let cool slightly, about 5 minutes.
