Brunswick Stew


Serving Size : 12

Prep time: 2 hrs; Cook time: 6-8 hours

1½ sticks salted butter

2 lg onions, finely diced

6 cloves garlic, pressed

2 stalks celery, finely diced

2 tsp cayenne

Salt & pepper

Garlic powder

Bay leaves

¼ c Franks Red Hot Sauce

¼ c Worcestershire sauce

½ c George’s bbq sauce

1 c Cattlemen’s gold bbq sauce

1½ lbs. each cooked, shredded

hen

beef roast

pork bbq

1 c each chicken and beef broth

4 c fresh, crushed stewed tomatoes (3 lg cans)

4 c fresh diced tomatoes (3 lg cans)

4 c fresh white corn (3 cans)

1 can each

creamed corn

sliced carrots

small peas

4 c fresh Lima beans (3 cans)

3 c red potatoes, peeled and boiled

Prep work:

-cook hen and roast, shred

-cook/prepare pork bbq

-finely dice onions, garlic and celery

Sauté onions, garlic and celery in cast iron Dutch oven over medium heat.

Add all other ingredients, simmering over low heat. Stir occasionally to make sure it doesn’t stick or scorch. Cook slowly for hours until the flavors meld together. It will thicken as it cooks.

⭐️Serve with pork bbq, coleslaw, potato salad, baked beans and cornbread.
