Cabbage Roll Soup


2 lb ground beef

1 onion, finely minced

3 cloves garlic, finely minced

1 whole cabbage, core removed and coarsely

chopped

1 carrot, peeled and finely diced

4 c beef broth

24 oz tomato sauce

1 T tomato paste

2 bay leaves

1 T brown sugar

2 T fresh parsley


  • Brown ground beef until a little pink remains. Add onion and garlic, continue browning until onions and garlic are slightly browned and starting to smell good. Drain; put in crockpot.

  • Add remaining ingredients to crockpot. Cover and cook on low 4-6 hours.

  • Stir. Discard bay leaves; sprinkle parsley and serve.
