Chicken & Home Fries


5-6 chicken breasts

1/8 c Cajun seasoning, divided

1 c Carolina Gold BBQ sauce, divided

10 russet potatoes, baked or boiled, cubed

1 Vidalia onion, sliced

1/2 c queso

2 T Carolina Gold BBQ sauce, for garnish




  • Sprinkle both sides of chicken breasts with Cajun seasoning, put on griddle type grill; we use a blackstone. Cook until almost done inside, brush both sides with sauce and continue cooking until glaze is set.

  • Cut chicken in large cubes, remove from heat.


  • Place potatoes and onions on griddle. Sprinkle with 3/4 of remaining Cajun seasoning. Grill until onions are done. Pour remaining sauce over top and add chicken back to griddle. Toss until thoroughly combined.

  • Transfer food to a platter. Drizzle with queso and extra sauce. Serve hot.
