Chicken & Home Fries
5-6 chicken breasts
1/8 c Cajun seasoning, divided
1 c Carolina Gold BBQ sauce, divided
10 russet potatoes, baked or boiled, cubed
1 Vidalia onion, sliced
1/2 c queso
2 T Carolina Gold BBQ sauce, for garnish


Sprinkle both sides of chicken breasts with Cajun seasoning, put on griddle type grill; we use a blackstone. Cook until almost done inside, brush both sides with sauce and continue cooking until glaze is set.
Cut chicken in large cubes, remove from heat.

Place potatoes and onions on griddle. Sprinkle with 3/4 of remaining Cajun seasoning. Grill until onions are done. Pour remaining sauce over top and add chicken back to griddle. Toss until thoroughly combined.
Transfer food to a platter. Drizzle with queso and extra sauce. Serve hot.
