Chewy Oatmeal Cookies
Serving Size : 4 dozen
Prep time: 20 mins; Cook time: 10 minutes
1 c butter, softened
1 c sugar
1 c brown sugar, packed
2 eggs, slightly beaten
1 tsp vanilla
2 c flour
1 tsp baking soda
1 ½ tsp cinnamon (or pumpkin spice)
3 c old fashioned oats
½ c finely chopped pecans, optional
½ c raisins, optional
PH oven to 375°. Line baking sheets with silicone mats.
Cream together in stand mixer, butter, sugar and brownsugar.
Add eggs, one at a time, and vanilla. Mix together.
In separate bowl, combine flour, baking soda and cinnamon. Stir into creamed mixture.
Add in oats, nuts and raisins (if using).
Scoop out dough, and shape into balls, then place on silicone mats, 2” apart. Flatten each cookie slightly.
Bake for 10 mins.
Cool for 5 minutes on baking sheets. Remove to wire rack to cool completely.
