Potato & sweet potato harvest.

I waited way too long to harvest these potatoes and sweet potatoes. They should have been harvested months ago.

Now y’all don’t be jelly over my “huge” potatoes. Some of my gold potatoes were small as pebbles and most of my russets were the size of new potatoes. I did get a few decent sized ones.

But I’m not mad y’all… all of these potatoes were grown from sprouted peels from store bought potatoes. I didn’t spend a penny on seed potatoes. And these sweet potatoes were grown from slips I harvested from sweet potatoes that were given to me that were too far gone to eat. Waste not, want not.

These gold potatoes will probably be scrubbed and boiled within the next few days. I’m going to boil them so even the smallest ones don’t go to waste.

The sweet potatoes will probably be boiled and used to make puppy treats for my sweet fur babies.

Homesteading, no matter what the scale, is about compromise and also experimentation. I could have just thrown the potato peels and too far gone sweet potatoes in the compost…. But then I wouldn’t have these beauties for my family to eat.
