Roasted Chicken 


Serving Size : 6 

Prep time: 15 minutes; Cook time: 5 hours


1 whole chicken, remove gizzards/neck (freeze for later)

2 tsp smoked paprika 

1 tsp onion powder 

1 tsp thyme 

1 tsp white pepper 

½ tsp cayenne 

½ tsp pepper

1 tsp garlic powder 

½ tsp celery seed

½ tsp rosemary 

½ tsp parsley 

1 stick butter, softened 


  • PH oven to 250°.

  • Mix all spices together in small bowl; set aside. 

  • Rinse & pat dry chicken. Place in roasting pan. 

  • Rub chicken all over with butter; then rub with spice blend. 

  • Roast until internal temperature reaches at least 160°, ~5 hours; basting/brushing with juices every hour or so. 


⭐️Basting/brushing will give your chicken a nice crispy skin.
