Peanut Butter Cookies
Yields 2 ½ dozen
1/2 c butter, softened
1/2 c peanut butter
1/2 c sugar
1/2 c brown sugar
1 egg
1/2 tsp vanilla
1 ¼ c flour, sifted
3/4 tsp baking soda
PH oven to 375°.
In stand mixer, cream butter, peanut butter, sugar, brown sugar. Add egg and vanilla; mix well.
In small mixing bowl, mix together flour, baking soda and salt; mix well. Add to peanut butter mixture; mix well. .
Scoop dough out with small cookie scoop or spoon. Roll into balls and press with a fork dipped in sugar.
Bake for 8 to 10 minutes until lightly browned, turning halfway through. They’ll look slightly undercooked, but will cook more as they cool.
Allow the cookies to cool on a baking sheet for 5 minutes; place on rack to cool completely.
