Peach Schnapps Pie


10+ large peaches, peeled and sliced

3-4 T salted butter

3/4 c sugar

3/4 c light brown sugar

2 T blackstrap molasses

1 T vanilla

2 tsp cinnamon

1/2 c peach schnapps

1/4 c cornstarch

2 prepared pie crusts

1 egg

3 T water

1/4 c light brown sugar

1 T cinnamon



  • Place prepared peaches in a covered bowl in the refrigerator while preparing pie crusts, if not already prepared.

  • While dough is chilling, start filling.

  • Melt butter in medium pot.

  • In mixing bowl, combine sugar, brown sugar and molasses; stir well with a fork until molasses is well incorporated into sugars. Add to melted butter. Cook on low, stirring constantly until sugars have melted down and mixture is smooth.

  • Add vanilla and cinnamon; stir well.

  • Add chilled peaches; cook on low for 10 minutes, stirring occasionally.

  • Add peach schnapps; mix well. Cook another 10 min, stirring occasionally until peaches are soft. Sprinkle cornstarch slowly over peaches, mixing well and fast with a whisk, so it doesn’t clump up.

  • PH oven to 350°.

  • Roll out one pie crust onto floured surface with a floured rolling pin. Roll out until big enough to lie in pie plate with about 1” overhang. Place gently in pie plate and press down. Crimp edges and cut off excess.

  • Ladle peaches into pie crust, using a spatula to get out all of the juice. It will caramelize as it bakes.

  • Roll out second crust to layer over top of the peach filling. You can make a lattice top, cut out top (use cookie or pie crust cutters) or just lie the crust onto floured surface top, seal edges and vent (cut small holes for steam to escape).

  • Mix together egg and water; brush over crust. Mix together brown sugar and cinnamon; sprinkle over egg wash.

  • Place silicone mat on large baking sheet. Place pie on baking sheet.

  • Bake for 45 minutes, but start checking at 39 minutes. If crust is browning too fast, cover with pie shield or foil.

  • Let sit 10 minutes before slicing.


Can serve with vanilla bean ice cream or fresh whipped cream.
