Meatballs
2 lbs meatloaf mix (beef, veal, pork)
2 T minced onion
2 cloves garlic, finely minced
2 lg eggs, beaten (2 farm eggs)
1 tsp pepper
2 T Italian seasoning
1/2 c shredded Parmigiana Reggiano
2 T finely chopped fresh parsley
1 T pesto
PH oven to 425°. Line baking sheet with silicone baking mat.
In stand mixing bowl, with paddle attachment, mix together all ingredients.
Use a cookie or ice cream scoop to portion out mixture. Roll into meatballs.
Bake 17-20 mins. Remove from oven and place on paper towel lined plate to drain excess grease.
Enjoy as is or in your favorite sauce.
