Hushpuppies
1 c cornmeal (color doesn’t matter. I prefer white, because in my mind it’s sweeter.)
1 c flour
2-3 T sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp Cajun seasoning (or seafood ,
blackening, etc. I typically use
whatever seasoning I’m using on
my meat)
1/4 tsp fresh cracked black pepper
1/2 c buttermilk (shake and allow to
settle before measuring)
1 T mayonnaise
1/4 c whole kernel corn or creamed
corn (with juice)
1/4 c grated onion
2 cloves garlic, pressed
Oil for frying
Heat oil in cast iron frying pan to 350°.
Mix together all dry ingredients in large bowl.

Mix together remaining ingredients, except frying oil. Add this mixture to dry ingredients, just until incorporated.
Spoon small balls of batter into oil. Be careful! It will splatter and pop, both while putting batter in and while cooking.

Cook about 2 minutes on each side, until golden brown all over. Drain in paper bag or towel lined bowl. Serve hot.
⭐️Good with fish, bbq, most anything grilled.
