Hushpuppies


1 c cornmeal (color doesn’t matter. I prefer white, because in my mind it’s sweeter.)

1 c flour

2-3 T sugar

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp Cajun seasoning (or seafood ,

blackening, etc. I typically use

whatever seasoning I’m using on

my meat)

1/4 tsp fresh cracked black pepper

1/2 c buttermilk (shake and allow to

settle before measuring)

1 T mayonnaise

1/4 c whole kernel corn or creamed

corn (with juice)

1/4 c grated onion

2 cloves garlic, pressed

Oil for frying


  • Heat oil in cast iron frying pan to 350°.

  • Mix together all dry ingredients in large bowl.




  • Mix together remaining ingredients, except frying oil. Add this mixture to dry ingredients, just until incorporated.



  • Spoon small balls of batter into oil. Be careful! It will splatter and pop, both while putting batter in and while cooking.

  • Cook about 2 minutes on each side, until golden brown all over. Drain in paper bag or towel lined bowl. Serve hot.


⭐️Good with fish, bbq, most anything grilled.
