Now this is honestly, the same recipe as my turnip greens….except collards are much bigger. So it will give you about 10 servings, vs 6. You can make all greens this way.
But, since one of my baby girls prefers collards to turnip greens, and since I grow these straight in my garden (same 7 plants for past 5 years)… well, they were worth a mention.
Collard Greens
Serves 8
15-20 lg leaves turnip greens, rinsed well, stems
removed and cut into bite sized pieces
1/2 smoked ham hock or hunk of country ham
2 T bacon grease
Pinch Red pepper flakes, optional
~4 c broth or water, to cover greens
Place all ingredients inside large crockpot.
Cover; cook on low 4 hrs, adding more broth or water as needed to keep greens covered. Don’t worry about adding too much, this will be your “pot likker” later. If greens get dried out some, they will recover from more liquid.
When done, shred meat from hock and discard bone. Return meat to pot.
Serve hot. My family likes them with biscuits.
Can also do this on low on the stovetop for 2+ hours.
