Blackened Catfish

EVOO

6-8 catfish filets

1/4 c blackening seasoning

1/4 bunch cilantro, chopped finely

3 cloves garlic, pressed

2 limes (zested and juiced)

Stick of butter, cut into small slices

  • Heat cast iron grill pan or grill; drizzle with EVOO.

  • Cover both sides of each filet liberally in blackening seasoning. Lay filets on pan/grill. Sprinkle with cilantro, garlic, lime zest and juice. Place slices of butter on top of each filet.

  • When bottom is fully cooked (~6 mins), flip. Sprinkle with cilantro, garlic, lime zest and juice. Place slices of butter on top of each filet.

  • Cook catfish completely (145° internal temp) and place on plate covered in paper towels. Let sit a few minutes to absorb excess oil and then serve.
