Beef Stroganoff


Beef roast, ~3# (can also use steak 

    tips, stew beef, ground beef, etc)

~1# mushrooms, sliced

~3/4 T chicken breader

Thyme

Freshly cracked pepper 

Butter

2 c beef broth (I use the broth the 

     roast makes in the crockpot)

1 onion, finely diced

3-4 cloves garlic, peeled and finely 

     diced

Garlic powder 

Paprika

Onion powder 

1/2 tsp Dijon

2 tsp Worcestershire 

3/4 c sour cream

1 ok pappardelle pasta, prepared 

Fresh parsley, garnish


  • Cook roast and mushrooms on low in crockpot for 12 hours until falling apart.  (I usually cook 2-3 roasts at a time to make different meals from them). 



  • Remove roast from crockpot. Shred beef, removing fat (I add the fat to rice and dog friendly veggies for the pups). Return beef to crockpot. 

  • Combine chicken breader, thyme, pepper,  butter in large pot with lid. Stir constantly as butter melts. Slowly pour in broth as butter is almost done melting, continuing to stir constantly. Pour into crockpot. 


  • Add roast, mushrooms, onion, garlic, garlic powder, paprika, onion powder, Dijon, Worcestershire. Stir. Cover with lid. Cook on low ~6 hours. 


  • Add sour cream and cook 30 more mins. 




  • Stir well, add prepared noodles. Serve garnished with fresh parsley. Serve with crusty French bread.
