I don’t normally do step by step pictures and instructions, but for this one I will. It’s a very simple, but delicate recipe.

Angel Food Cake

1 1/4 c cake flour
1/2 c sugar
Sift these together FOUR times. It should be fine like baby powder.

1 1/2 c egg whites (15 farm eggs)
1/4 tsp salt
1 1/4 tsp cream of tartar
1/4 tsp vanilla
1 tsp almond extract
In stand mixer with wire whisk attachment, beat together until soft peaks form.

1 1/3 c sugar, divided
Add in 1/3 c sugar at a time, repeating FOUR times; beat until blended, but do NOT scrape sides of bowl.
Add in flour mixture in FOUR additions, gently folding in with a large metal spoon. Tilt bowl as folding, to incorporate all of the egg white mixture.

Pour into UNgreased 10” tube pan or Bundt pan with metal spoon, it do NOT scrape. Cut batter with metal cake decorating spatula.


Bake 30-35 minutes.

Cool completely, upside down.
Store in fridge in airtight container.
⭐️Can be frozen. Cut into slices, wrap each slice individually in freezer paper and place in freezer bags with all air removed. Thaw before eating.
These are all the yolks we had leftover. I usually reserve them for quiche or a quick snack of scrambled eggs for my pups.
