*Make the day before serving*
Pico
(3qts)
15 Roma’s, diced
4 jalapeños, finely diced
One lg white onion, diced
6 cloves garlic, minced
1 bunch cilantro, chopped
~1/2 c lime juice
~1/8 c Salt
Mix all ingredients together into a large bowl. Spoon into jars (making sure they all get some juice).
Make sure to make this a day in advance of serving, to allow time for all the flavors to meld together.
